Freeze-Drying Process for Mangosteen:

+ Step 1: Preparation: Select fresh, ripe mangosteen of uniform quality, color, and flavor. This selection process ensures that the freeze dried mangosteen produced is aesthetically pleasing and commands a high export price.

+ Step 2: Cleaning: Clean the mangosteen peel using specialized washing equipment to ensure the highest food safety standards.

+ Step 3: Peeling and Segmenting: After cleaning, peel off the outer skin and stem, and gently separate the segments for drying. Depending on customer requirements, the segments can be further divided or left whole for drying.

+ Step 4: Freeze-Drying: After segmenting, the mangosteen is carefully placed on drying trays and processed using modern freeze-drying equipment. The freeze-drying process involves three main stages:

  • Stage 1: Freezing the mangosteen, with the temperature set at -30°C for 6-8 hours to solidify all the water in the fruit.
  • Stage 2: Sublimating the ice within the mangosteen. The ice crystals sublimate without passing through a liquid phase in a vacuum environment, removing about 90% of the moisture.
  • Stage 3: Secondary drying, where the remaining moisture is evaporated, and the temperature is gradually increased. The moisture content in the dried product is reduced to about 1-4%, resulting in completely dried mangosteen.

+ Step 5: Packaging: After drying, the freeze dried mangosteen is sorted by size and packaged in bags ranging from 100 to 300 grams, or according to supplier requirements. Export products are usually packed in larger units of 10 to 20 kg.

Freeze-drying preserves the product’s structure, maintains its natural color, and gives it a crispy texture. The mangosteen can be ground into a fine powder for use in smoothies or yogurt. The natural sweetness of mangosteen is fully retained when dried using freeze-drying equipment, and it can be rehydrated to its original state by soaking in water.
