Frozen jackfruit has high nutritional value and is a primary ingredient for crispy jackfruit chips. It is one of the most popular Vietnamese agricultural exports today. At VietTuong Food, fresh jackfruit is peeled, seeded, and then frozen at -45°C, meeting the standards for frozen jackfruit exported to major markets such as Japan, South Korea, Hong Kong, and Europe.

Currently, we primarily use two types of jackfruit for freezing: Bang Leaf jackfruit and Thai jackfruit. Thai jackfruit starts to turn from green (when unripe) to pale yellow (when ripe) and has a fragrant smell. It has many large, thick segments with a bright orange color and small seeds. Thai jackfruit has a moderately sweet, crisp taste. Bang Leaf jackfruit, in contrast, has larger segments and a lighter yellow color compared to Thai jackfruit. Both types are well-suited for frozen jackfruit used for export or as raw material for drying factories.

How to Identify Quality Frozen Jackfruit:
In cold storages today, you can find many types of frozen jackfruit, but not all of them meet the standards of freshness, export eligibility and dry jackfruit quality. To choose delicious jackfruit, you must know how to identify fresh and clean jackfruit for freezing as follows:
- Size and Color: Large, thick, and golden yellow segments indicate freshness. Compare frozen jackfruit with fresh jackfruit; the only noticeable difference should be the firmness of the frozen product.
- Uniformity: Frozen jackfruit should have a uniform color with no dark or light spots, which may indicate chemical treatment or excessive additives.
- Inspection: Check both sides of the jackfruit segments for any signs of spoilage or mold. Fresh jackfruit frozen immediately after peeling should show no such signs.
- Texture: High-quality jackfruit for freezing should be completely dry with no water retention. This is crucial for maintaining the best appearance and quality of the dried jackfruit.
Frozen Jackfruit Processing at VietTuong Food:

+ Step 2: Washing: Segments are washed with clean water to remove any residual latex or impurities.
+ Step 3: Draining: Draining helps prevent spoilage during transportation and maintains the natural shine and color of the jackfruit.
+ Step 4: Cutting and Freezing: Depending on customer requirements, jackfruit is cut into halves, strips, or left as whole segments. The fresh jackfruit is then rapidly frozen using IQF technology at -45°C and stored under appropriate conditions for transportation.
