Frozen Dragon Fruit Processing:
+ Step 1: Water Treatment: After harvesting, dragon fruit is washed with clean water to remove surface dirt. It is then blanched in warm water at 45°C to remove fungal spores, extend shelf life, and prevent spoilage.
+ Step 2: Draining: Draining after water treatment helps prevent spoilage during transport and maintains the fruit’s natural color and shine.
+ Step 3: Cutting and Peeling: Depending on customer requirements, dragon fruit can be peeled and kept whole, halved, or diced.
+ Step 4: Packaging: The fruit is then packaged in specially designed bags or boxes for freezing. The packaging material must be moisture-resistant to prevent ice crystal formation, which can affect texture and flavor.
+ Step 5: IQF Freezing: Finally, the fruit is quickly frozen using IQF technology at temperatures of -18°C or lower to prevent bacterial growth and preserve quality and shelf life. This low-temperature freezing process also helps maintain nutritional value, texture, and flavor.
