Dried Dragon Fruit Process (Drying Fresh Dragon Fruit):

+ Step 1: Selection: Choose dragon fruits that are large, with uniform weight (about 1 kg), fresh color, and no signs of disease or damage. Wash them with specialized machines to remove dirt, residues, and pesticides, then sort them.

+ Step 2: Sorting: Sort by ripeness and size for uniformity. Avoid overly ripe or unripe fruits, as unripe fruits will be too tart and overly ripe fruits may become too tough.

+ Step 3: Peeling and Slicing: Peel the dragon fruit and slice it into 5-6 mm thick pieces. Blanch the slices in boiling water for 1-2 minutes to deactivate enzymes (polyphenoloxidase). Then, drain and soak in a sugar solution to achieve the desired sweetness and chewiness.

+ Step 4: Drying: Dry the dragon fruit using heat. The drying temperature is maintained between 50-70°C, similar to sun drying. During this process, the moisture evaporates, and the fruit dries gradually. Once adequately dried, the product is cooled and packaged.

+ Step 5: Packaging: Pack the dried dragon fruit in zip bags or plastic containers with aluminum lids to minimize oxidation and spoilage.
