Soft Dried Pineapple Process:
+ Step 1: Selecting the raw material: Choose pineapples with ripeness levels of 2–3 rows of eyes from the stem, sorted evenly by size at the harvest site. Avoid selecting overly ripe pineapples, as they can easily become mushy or darken during processing. Similarly, avoid overly green pineapples, as they lack sufficient sugar content, leading to poor flavor and unattractive, pale coloration in the final product.
+ Step 2: Peeling and removing eyes: After peeling, the eyes are removed to prevent dark spots on the dried slices. The pineapple is then cut horizontally into slices 1.0–1.5 cm thick, and these slices are rinsed in lukewarm water.
+ Step 3: Blanching: The sliced pineapple is blanched in hot water for a specific time to reduce acidity, soften the texture, and enhance the flavor of the final product. Blanching also helps the pineapple better absorb sugar, making the final product softer and more elastic.
+ Step 4: Soaking in sugar: The hot slices are soaked in fine sugar for about 30 minutes. After soaking, the sugar water is drained and used to produce pineapple syrup and caramel.
+ Step 5: Stewing: After soaking, the pineapple still contains a significant amount of water. The slices are then added to a high-concentration sugar solution for stewing. During stewing, sugar continues to absorb, and water is drawn out. This process is carried out in a vacuum device to ensure the product’s color and flavor are well-preserved.
+ Step 6: Drying: The pineapple slices are arranged on trays in the drying machine, with drying temperatures ranging from 20–60°C to ensure the dried slices maintain their appealing color and nutritional quality.
+ Step 7: Packaging: Once the slices pass quality checks, they are packed in various weights according to supplier requirements, in PP bags, vacuum-sealed bags, or jars with moisture absorbers.
