This process quickly freezes the cassava in a short period of time. After freezing, the cassava is stored at -16°C, similar to the freezer compartment of your home refrigerator, until ready for use.

This method of freezing cassava helps preserve the original nutrients and shape, as the low temperature freezes harmful microorganisms, preventing spoilage and decay. This contributes to the extended shelf life of the cassava.

Frozen cassava processing steps:

+ Step 1: Selection: Choose standard cassava, remove outer skin, discard roots with blemishes or excessive damage, trim roots and leaves close to the root top, and sort into 2-3 sizes of similar dimensions.

+ Step 2: Water Treatment: The selected cassava is washed with clean water to remove dirt or contaminants.

+ Step 3: Blanching: After draining, the cassava is blanched in boiling water for a few minutes to inactivate enzymes that could affect quality and shelf life, while preserving the nutritional value and improving texture.

+ Step 4: Cooling: Cassava is immediately cooled in cold water to prevent overcooking and maintain texture. Water also helps remove residual heat and excess salt from the roots. Depending on customer requirements, cassava is kept whole or sliced.

+ Step 5: Packaging: Cassava is then packaged in specially designed moisture-resistant bags or boxes for freezing, to avoid ice crystal formation that can affect texture and flavor.

+ Step 6: IQF Freezing: Finally, the packaged cassava is quickly frozen using IQF technology at -18°C or lower to prevent bacterial growth and preserve its quality and shelf life. This low-temperature freezing also ensures the cassava retains its nutritional value, texture, and flavor.

Each stage is meticulously inspected and monitored, with a focus on stringent microbiological standards. This ensures that the exported frozen cassava always meets the highest quality standards.
