Processing Frozen Sweet Potatoes:
+ Step 1: Select sweet potatoes that meet standards, peel off excess skin, discard damaged or bruised ones, trim roots and leaves. Classify them into 2-3 similar size categories.
+ Step 2: Wash the sweet potatoes thoroughly to remove dirt and contaminants.
+ Step 3: After drying, soak the sweet potatoes in boiling water for a few minutes to deactivate enzymes that could affect quality and shelf life. This also helps preserve nutritional value and improve texture.
+ Step 4: Cool the sweet potatoes quickly in cold water to prevent overcooking and loss of texture. Water also removes excess heat and salt. Depending on customer requirements, the sweet potatoes may be kept whole or cut into slices or sticks.
+ Step 5: Package the sweet potatoes in plastic bags or specially designed containers for freezing. Packaging materials must be moisture-resistant to prevent moisture absorption, which can cause ice crystals and affect texture and flavor.
+ Step 6: Quick Freeze (IQF): Finally, the packaged sweet potatoes are rapidly frozen at -18°C or lower to inhibit the growth of bacteria, microorganisms, and enzymes. This low-temperature freezing process helps preserve nutritional value, texture, and flavor.
