Crispy Dried Purple Sweet Potato Processing Steps:
+ Step 1: Select large, round, fresh, and firm purple sweet potatoes without black or brown spots or rot. When choosing, press the tuber to ensure it’s firm and fresh.
+ Step 2: Clean and peel the purple sweet potatoes, then slice them into thin strips or rectangular sticks (1cm wide).
+ Step 3: After slicing, soak the potatoes in cold water for about 1 hour to remove sap. Alternatively, soak in a solution of cooled boiled water mixed with lemon juice for 30 minutes. After soaking, drain and prepare for the next step.
+ Step 4: Arrange the purple sweet potato slices on drying trays. If slicing in two ways—thin slices and sticks—dry them in separate batches. Set the drying temperature between 35-45°C for about 32 hours with a moisture level of 40-15%. The thickness of the slices affects the drying time.
+ Step 5: Once the purple sweet potatoes are fully dried and crispy, remove them from the dryer, cool completely, and package the final product.
